They save time in actually building footprints and symbols.  On high pin count parts the symbol can take days or even weeks to build correctly.  We have one company claiming that they take an average of 40 hours per footprint/symbol combination that they add to their library.  Some companies spend several days debugging and checking large pin count parts.  Smaller parts that do not easily fit within industry standard formula's also often cause long delays in construction time and review verification efforts.  So when you provide data to your customer for the correct footprint and symbol, you save him significant effort.
